Cacao Nibs!

Working on Batch 9, I just realized how great a big bowl of roasted nibs looks (and smells!) I can’t post a smell to the web, and I’m a crappy photographer, but here’s my homage to a handsome bowl of Panama and Venezuela’s finest.

Technical notes: These nibs were roasted for 25-30 mins in a tabletop convection oven at around 135C, cracked in a mortar and pestle, then winnowed with a hair dryer.
