Oh Wow

I just decided to have a small bit of the Pralus Madagascar Criollo, and it nearly induced a religious experience. When you open a bar and immedately get a nose full of cacao bouquet, you’ve got something good. It has some extremely strong grape/citrus notes at the start, then the deeper chocolate notes hit, and there’s a smooth nutty finish. Almost no phenol taste at all, just a little bitterness hovering over the main tastes. The fruit notes are shockingly strong, but also really nice. This is the only bar I’ve had that clearly beats an Amadei Chuao, at least at the start. The Chuao has more chocolate oomph in the middle, but those high fruit notes are just so distinct that I’m giving the edge to this bar for now.
