Three chocolates tried tonight:
* Domori Blend #1 – 78% cacao – contains cacao, sugar, cocoa butter – delivers on the aromatic promise. Air bubbles! Lots of complex notes.
* Pralus Equateur – 75% cacao – adds cocoa butter, lecithin – pure trinitario beans. Clean, clean, clean flavor. Has that same acid undernote that our batch #5 has. Great texture. Definite toasty bread and nut notes.
* Theo Ghana 84% – cacao and sugar, just the way God intended! Spicy, but slightly flat initial taste. Finishes very sweet. Good fruity nose. So much cacao the texture is slightly brittle. Very restrained for so much cacao content.
