I’ve been lucky enough to get interviews with some of the hardy souls that have mastered the process of making artisan chocolate from the bean. Some of these chocolate makers even work closely with cacao growers to control every aspect of the process from the tree to the bar. This page indexes the interviews so that they don’t get lost in the other posts on the blog.
Interview with Alan McClure, founder of Patric Chocolate, Part I and Part II
Interview with Samantha Madell, founder of Tava Chocolate, Part I and Part II
Interview with Shawn Askinosie, founder of Askinosie Chocolate.
Interview with David Castellan, founder of Soma Chocolatemaker.
Interview with Nancy Nadel, Oakland city council member and chocolatier
Enjoy!

Chocolate Alchemy (www.chocolatealchemy.com) is a good place to start. They sell Santha Melangeurs, and have a very helpful forums section. Getting a larger piece of equipment for commercial production is much trickier, as they are very hard to come by. You might contact one of the chocolate makers referenced on the site and see if they have pointers on used equipment that might become available.
