Tava is a chocolate maker started in Australia by Langdon Stevenson and Samantha Madell, and founded on the principles of ethical trade. Their site, in addition to selling nibs and a 100% cacao bar based on beans from Vanautu, has a great article on growing cacao and some inspirational stories on the lengths that they’ve gone to in order to obtain cacao beans directly from the growers.
Tava is unusual in that they sell nibs and beans as well as a bar. I’m hoping to have an interview with Samantha Madell about their philosophy and practices posted in the near future. Meanwhile, the site is a fascinating window into how personal and thoughtful a company can be.

Great to hear about another well founded ethical chocolate company amidst the chaos and malpractice in this industry. I have recently come across Montezumas in the UK who are well worth a look.
